Loaded Mashed Potatoes
Makes: 4 qt
Required Dishes:
- 4 qt bowl
- Large pot
- Large skillet
Required Ingredients:
- 6 lb of russet potatoes
- 12 oz of bacon
- 1 cup of salted butter
- 1 cup of sour cream
- 4 cups of shredded cheddar cheese
- 1 cup of chopped chives or green onions
- 1 tsp of garlic powder
- 1 tsp black pepper
- Salt
Steps:
- Optionally peel potatoes.
- Cut potatoes into ~1 inch cubes.
- Boil potato cubes in lightly-salted water until mushy (~20 minutes).
- Drain the potatoes.
- Optionally lightly fry potato cubes in the skillet to to boil off some water.
- Place potatoes in the bowl.
- Mash the potatoes with a potato masher.
- Melt the butter and mash into the potatoes.
- Mix in the sour cream, garlic powder, black pepper, and a small amount of salt.
- Fry bacon until crisp.
- Crumble bacon.
- Mix in the crumbled bacon, shredded cheese, and chopped chives/green onions.
