Breakfast Blueberry Cake
Required Dishes:
- 9-inch baking pan
- 3 mixing bowls
Required Ingredients:
- ½ cup of butter (room temperature)
- ⅞ cup of sugar
- 1 tbsp of sugar
- 1 tsp of vanilla
- 2 cups of flour (divided)
- 1 tsp of salt
- 2 tsp of grated lemon rind
- 1 egg
- 2 cups of fresh blueberries
- 2 tsp of baking powder
- ½ cup of buttermilk
Steps:
- Heat oven to 350°.
- Grease 9-inch baking pan.
- Combine butter, lemin ring, and ⅞ cup of sugar in bowl.
- Beat until fluffy.
- Add egg and vanilla.
- Beat until combined.
- Toss blueberries with ¼ cup of flour.
- Whisk remaining 1¾ cups of flour with baking powder and salt.
- Add flour mixture to lemon mixture, alternating with buttermilk.
- Fold in blueberries.
- Spread batter in pan.
- Sprinkle with remaining sugar.
- Bake 35–45 minutes, until a toothpick inserted in center comes out clean.
- Let cool for 15 minutes.
