Breakfast Blueberry Cake

Required Dishes:

  • 9-inch baking pan
  • 3 mixing bowls

Required Ingredients:

  • ½ cup of butter (room temperature)
  • ⅞ cup of sugar
  • 1 tbsp of sugar
  • 1 tsp of vanilla
  • 2 cups of flour (divided)
  • 1 tsp of salt
  • 2 tsp of grated lemon rind
  • 1 egg
  • 2 cups of fresh blueberries
  • 2 tsp of baking powder
  • ½ cup of buttermilk

Steps:

  • Heat oven to 350°.
  • Grease 9-inch baking pan.
  • Combine butter, lemin ring, and ⅞ cup of sugar in bowl.
  • Beat until fluffy.
  • Add egg and vanilla.
  • Beat until combined.
  • Toss blueberries with ¼ cup of flour.
  • Whisk remaining 1¾ cups of flour with baking powder and salt.
  • Add flour mixture to lemon mixture, alternating with buttermilk.
  • Fold in blueberries.
  • Spread batter in pan.
  • Sprinkle with remaining sugar.
  • Bake 35–45 minutes, until a toothpick inserted in center comes out clean.
  • Let cool for 15 minutes.
